Jiaxing city in Zhejiang province is known for its wrapped zongzi (rice dumplings). The zongzi wrapping technique of Wufangzhai, a century-old zongzi brand based in Jiaxing, is a national intangible cultural heritage project.


Hu Jianmin, the fourth-generation inheritor of Wufangzhai's zongzi wrapping technique, introduces that the process of making a zongzi involves a total of 36 steps. It is rigorous in material selection: the glutinous rice and reed leaves come from their dedicated bases, the choice of meat is equally stringent, and the bean paste is fried with a unique recipe. The traditional flavors mainly include meat zongzi, egg yolk and fresh meat zongzi, chestnut and fresh meat zongzi, and sweet bean paste zongzi. Additionally, other novel flavors are popular among young people.
